Vracam se nakon skoro godinu dana sa jednom ukusnom torticom :)<br />

Recept za ovutortu imam u svesci godinama, ali iz nekog nepoznatog razloga nikada je do sad nisam pravila. Da budem iskrena, nikad mi nije delovala primamljivo.<br />
<br />
U nedostatku inspiracije, a zeleci da probam neki recept koji do sada nisam, dosao je red i na mandolinu.<br />
<br />
Ne mogu reci da sam specijalno odusevljena i da nista tako dobro do sada nisam probala, ali je torta ispunila moja ocekivanja. Izuzetno kremasta, ukusna i vrlo lagana, iako tako ne izgleda.<br />
<br />
Moracu i da se osvrnem na problem koji mi se stalno desava. Nikada se ne setim da uslikam ono sto napravim na vreme, vec onda kada je skoro pojedeno ili kada ostane samo jedno, ne bas tako reprezentativno parce. Ali nema veze, vidi se torta, iako nije bas neka extra fotka.<br />

Umutiti belanca sa secerom, pa kasikom lagano umesati plazmu i brasno. Peci na papiru za pecenje na temperaturi od 180 stepeni.<br />

Uutit belanca sa secerom i dodati sok od limuna. Kada pravim ovakav list za puslicu, onda ga susim oko sat i po na niskoj temperaturi, ali ovoga puta nisam htela da postignem taj efekat, vec da korica bude mekana i socna. Pekla sam na temperaturi od 180 stepeni.<br />

2 pudinga od vanile<br />
500 ml mleka<br />

150 gr margarina<br />
100 gr prah secera<br />
<br />
Prasak za puding i secer pomesati sa 100ml hladnog mleka, pa dodati u preostalih 400ml provrelog mleka i skuvati puding. U ohladjeni puding dodati margarin umucen sa secerom u prahu.<br />

Fil 2:<br />
15 zumanaca<br />
8kasika secera<br />
150gr margarina<br />
100 gr prah secera<br />
Umutiti zumanca sa secerom pa skuvati na pari. Kada se ohlade, dodati margarin umucen sa prah secerom.<br />

Oba fila sjedinite, pa u 1/3 fila dodati 250 gr mlevenih oraha koje ste prethodno prelili vrelim mlekom. Kolicinu mleka nisam merila vec sam se posluzila odokativnom metodom, ali ne treba preterivati da to bude retko, vec da orasi mogu lepo da se izmesaju i da masa i dalje bude u cvrstom stanju (al sam objasnila :P )<br />
U ostatak fila dodati 300 gr otopljene cokolade.<br />

Posebno umutiti 1 kesicu slag kreme. Filovati sledecim redosledom:<br />

Od brasna, ulja, jaja, soli, secera i kvasca, zamesiti meko testo sa mlekom. Kolicina mleka zavisi od brasna. pazite da ne bude previse meko testo kako bi moglo da se radi sa njime. Ostaviti testo da nadodje. Kada se masa duplira, premesiti testo i ostaviti jos jednom da naraste, a zatim opet premesiti i vratiti da nadodje po treci put. Od testa pravimo male jufke. Kolicina jufku zavisi samo do vas i od toga koliko zelite da vam pogacice budu velike. Ja sam napravila 20 pogacica, i 6-7 kiflica.</div>

Prilikom razvlacenja nikako ne koristite brasno, niti na bilo koji nacin podmazujte radnu povrsinu. Ukoliko je testo dobro umeseno, nece se uopste lepiti, pa nema potrebe ni za uljem, a ni za brasnom. Rastanjenu jufku premazemo mesavinom od 1 jajeta, 100gr margarina i kasicicu soli, pa ukoso izrezemo testo kao na slici. </span><br />

Uvijene pogacice redjamo u pleh koji smo prethodno podmazali margarinom ilji uljem, pa ih premazujemo jajetom i posipamo susamom.<br />

Ja sam od ovog testa napravila i nekoliko kiflica. Testo je fenomenalno, tako da se slobodno mozete igrati i praviti od njega sta god vam padne na pamet. <br />

Belanac penasto umutiti sa secerom.Kada se dobije cvrst sneg, dodati orahe, kako i brasno i lagano varjacom promesati da se masa sjedini. Sto s epecenja tice, sve zavisi od sporeta i od rerne. Ja sam prvih par minuta pekla na 250, a onda sam smanjila na 200. Brzo se ispece, ne treba uopste puno vremena.<br />

U litar mleka skuvati puding sa secerom. Dok je jos vruce, dodati izlomljenu cokoladu i mesati dok se ne otopi. Ostaviti da se ohladi.<br />

Za to vreme uspinovati secer i vodu na laganoj vatri uz stalno mesanje. Kada pocne da se stvara bela pena, skinuti sa vatre i umesati prethodno pripremljen zelatin.<br />
Smesu prebaciti u odgovarajucu posudu (ja sam koristila najobicniju plasticnu posudu za mucenje) i mutiti mikserom 15-ak minuta. Prestanite sa mucenjem kada smesa postane glatka i gusta. Kako prolaze minuti, bice sve teze za mucenje. Ne znam da li je ikako moguce da se smesa toliko ucvrsti, ali meni se to nije desilo. Bila je gusta, ali ne previse, taman toliko da se ne razliva prilikom filovanja. Dodati ekstrat od banane i sitno seckane zele bombone.<br />

Jednu polovinu odmah premazati filom, pa preklopiti drugom polovinom. Obl;andu prekriti salvetama, pa preko nje staviti neki tezi predmet (ne previse tesko) i ostaviti preko noci da se stegne. Ja sam od tezih predmeta koristila velike Oxfordove recnike i sasvim su lepo posluzili :)<br />

Oblanda ce se dodatno stegnuti, samo je potrebno da prenoci. Rezati sitnije jer je zaista previse slatko. Ljubiteljima otuzno slatkih kolaca ce se sigurno dopasti :)<br />

Od navedenih sastojaka zamesiti glatko, meko testo i ostaviti da odstoji 30 minuta. Ja od ove kolicine testa napravim 2 pizze zato sto volim da korica bude bas tanka.<br />

Ne znam tacne mere za sastojke koji idu preko testa jer uvek stavim onoliko koliko imam. Ako stavljate sir, preporucujem da ga dodate odmah preko pelata kako bi pokupio visak tecnosti i sprecio da testo postane gletavo, ili kako se vec kaze :P<br />

Ako je malo tvrdje, bice jos bolje. Umeseno testo podeliti na 2 ili 3 jufke, oblikovati, malo rastanjiti rukom. Dobro ih premazati uljem, skoro da plivaju u njemu.Ostaviti testo da odmara 1h.Dok cekam, obicno pripremim fil.<br />
Na radnoj povrsini (najbolje na trpezarijskom stolu jer treba obilaziti oko njega) rasprostremo cist stolnjak i prenesemo prvu jufku. Stavimo je na sredini, podvucemo ruke ispod nje i laganim pokretima krecemo sa razvlacenjem dok obilazimo oko stola kako bismoje razukli sa svih strana. Ukoliko su krajevi kore deblji, mozemo ih odrezati nzem, a mozemo ih pokidati na jednoj strani pa samo povuci. Tako ce cela lini okrajka otpasti.<br />

Moze se koristiti svinjska mast,a moze da posluzi i ulje. Nafilujemo koru.<br />
Pomocu stlnjaka savijemo koru brzim pokretom kako bi kora bila napunjena vazduhom. Stanemo sa jedne strane stola, uhvatimo stolnjak duz cele strane i podignemo da se kora uvija.<br />

Isto ponoviti i sa drugom polovinom testa. U okruglu tepsu podmazau uljem stavljamo uvijene kore. Prvu koru redjamo oko ivice tepsije. A drugu unutar nje.<br />

U toku pecenja smanjiti temperaturu na 180.Kada izvadimo savijacu iz rerne, poprskamo je hladnom vodom, prekrijemo stolnjakom i ostavimo da se malo prohladi.<br />

Kajsije kuvati sa secerom u 1 l vode. Kad kajsije dovoljno omeksaju (kad krenu da se raspadaju ;) izvaditi ih iz vode i staviti kratko u blender. Jos dok je smesa vruca premazati biskvit.<br />
Razmutiti puding u malo vode i zakuvati ga u vodu u kojoj su se kuvale kajsije. Vruc puding naneti preko biskvita koji smo prethodno premazali kajsijama.<br />

U drugoj posudi izmesati zumanca, secer, margarin i so, brasno i na kraju dodati nadosli kvasac i ostatak mleka. Zamesiti mekse glatko testo. Ovu tortu je moja draga tetka pravila najbolje na svetu. Nikad ne bi bila ista kad bi je spremio neko drugi. Verovatno zbog toga sto sam joj stalno dosadjivala, pripremala je ovu tortu za svaki praznik. Rolat iseci na 5 manjih delova ili onoliko koliko zelite da vam puzici budu veliki. Ponoviti postupak sa preostalim testom.</span></div></span><br />Ja sam drugu polovinu pravila bez kecapa ali sa puno sira i kackavalja.
